I realize that Spring is finally here and lasagna isn’t something that we typically think of as light, spring-ish food…but it’s oh so good! If food was able to reach right out and give you a hug–this one would do it!!
Here are the ingredients that you will need:

Bella wants to remind you not to forget the lasagna noodles!!
Brown meat and onion in skillet. Drain off fat. Add jar of spaghetti sauce and 1/2 cup water to meat mixture…
In a separate bowl, combine all of the cottage cheese, parmesan cheese, mozzarella (except reserve 1 cup) and the egg…Mix thoroughly.
Plug in slow cooker (Crock Pot.) Adjust setting to desired temperature (I used high.) Spray inside of the cooker with cooking spray.
Add a layer of meat sauce onto the bottom of the cooker…
Add **2 layers** of uncooked lasagna noodles (break them to make them fit.) I used 6 noodles in this layer.
Top with some of the cheese mixture…
Repeat with sauce…
more noodles…6 noodles again…
More of the cheese mixture…
more sauce…
More noodles! I promise, this will be worth it…keep layering!! (6 noodles)
one last layer of the cheese mixture…
Add last layer of sauce…
Top it all off with the cup of mozzarella cheese that was reserved…
Put the lid on and go relax! Dinner is done!!! Cook on high for 3 hours, or on low for 6-8 hours!

Slow Cooker lasagna
1 pound ground beef or turkey
1 medium onion (I used 2 T. onion flakes)
1 (approximately 26 oz. jar) of spaghetti sauce
12 oz. cottage cheese (I used a 16 oz.)
1/2 cup parmesan cheese
1 egg
12 oz. lasagna noodles (no need to cook these!)
12 oz. shredded mozzarella cheese (reserving 1 cup for topping)
Directions:
Brown meat and onion in a skillet. Drain off the fat. Add jar of spaghetti sauce and 1/2 cup of water. In a separate bowl, combine all of the cottage cheese, parmesan cheese, mozzarella (except reserved 1 cup) and the egg. Mix thoroughly. Spoon a layer of the meat sauce onto the bottom of cooker. Add **two** layers of noodles (broken into small pieces to make them fit.) and then top with some of the cheese mixture. Repeat with sauce, noodles and cheese mixture until all are used- ending with sauce. Sprinkle reserved cup of mozzarella cheese on top. Cover and cook on low for 6-8 hours or on high for 3 hours. Serves 6-8 I served this with a bread stick and green beans!!

Is there a reason for using cottage cheese instead of ricotta? I really do prefer ricotta.
