We ALL have to eat, and being a Mom with a boatload (Ok, only 4) of kids, I’m in the kitchen OFTEN. My goal each day is to feed my crew as quickly as possible and get it cleaned up! I’ve learned a few secrets that might just make your day and meal prep a little easier.
Life Hack #1
De-stemming a head of lettuce!
Forget buying the prepackaged salad. Purchase a head of lettuce, de-stem it and then rip it apart. Lettuce prepared this way stays fresh for a much longer time!
Start with a head of lettuce. See the stem?? That’s what we’re removing!
Turn the head of lettuce with the stem side toward the counter. Pound the head one time against the counter top with medium pressure.
The stem will be bruised and out of place. Simply grab the stem, twist, and pluck it out!
The first few leaves on the outside are usually discolored and not so desirable- just remove those, rinse the head of lettuce and it’s ready to shred for a salad. Make sure you shred the lettuce by hand or a plastic tool and NOT a knife, because it will turn the edges of the leaves a brown color.
LIFE HACK #2
As an add on to Life Hack #1, I urge you to always cook near your trash can for FAST CLEAN UP! Simply sweep the stem and outer leaves into the trash. Yay!

Choosing a sweet onion.
My favorite onion to use for grilling is the Vidalia Onion. It’s pretty common to see these in the grocery store right now. Do you know how to pick out a nice, sweet onion?? First, make sure the onion isn’t moldy or soft- I’ve made that mistake too often- blah!
Here’s the secret to finding a SWEET onion amongst the bunch.
