I love my friends! They have the best recipes…and they share them with me!! This recipe was given to me by a sweet friend from church named Sue Treu. She is a wonderful Wife, Mom, Grandma and Cook!! Thanks, Sue for the recipe!! Here we go…

Mix together:
1 1/2 cups of brown sugar
1/2 cup butter, softened
1 egg
1 cup buttermilk (or 1 cup milk with 1 tsp. vinegar )
2 cups flour
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
After mixing together, add 2 cups of chopped rhubarb. Pour into a greased 9 x13 pan.
Here’s what it looks like at this point…
Mix the Topping:
1/2 cup white sugar
1 tsp. cinnamon
chopped nuts (if desired…I didn’t use any nuts)
Sprinkle over the cake batter.
Bake at 350 degrees for about 50 minutes. Serve with Cool Whip or vanilla ice cream!! Enjoy!!
