Chicken and Noodles!

This delicious meal is just like chicken noodle soup without the broth!!
Ingredients
  • 2 T. Olive Oil
  • 1 onion (or dried, minced onion)
  • 2 carrots, shredded
  • 1 zucchini, diced
  • 8 c. chicken broth
  • 1 bag of medium egg noodles
  • salt and pepper to taste
  • 1 rotisserie chicken- meat picked off and shredded
Instructions
  1. In a soup pot, saute the onion, carrots and zucchini in the olive oil, adding a little broth as to not burn the vegetables
  2. When vegetables are soft, add the rest of the chicken broth
  3. Add dry noodles and a cup or 2 of water
  4. When noodles are soft, add shredded chicken pieces
  5. Heat until warm
