Pineapple Upside Down Pancakes

Sweet fruit meets fluffy's a crowd pleaser!
  • ½ cup. butter, divided
  • ½ cup brown sugar
  • 1 (20 oz.) can of pineapple slices
  • 2½ cups flour
  • 2 Tablespoons baking powder
  • 2 Tablespoons baking soda
  • ¼ teaspoon salt
  • 2½ cups milk
  • ½ cup sugar
  • ¼ teaspoon vanilla
  • maraschino cherries
  1. Preheat griddle to 350 degrees
  2. In a large saute pan over medium heat, melt ¼ cup butter and add brown sugar. Add pineapple rings and cook until caramelized.
  3. In mixing bowl, add flour, baking powder, baking soda and salt.
  4. In a small bowl add milk, sugar and vanilla.
  5. Add wet ingredients to dry ingredients and mix until just combined and no lumps.Add the other ¼ cup melted butter and mix well.
  6. Grease griddle and use ⅓ cup measuring cup to portion out batter. Place pineapple rings in the center and press down- add cherry.
  7. Flip when bubbles appear on top.
  8. Serve pineapple side up and drizzle with remaining brown sugar glaze or use maple syrup.
