I know what you’re thinking…..I don’t like horseradish so I won’t make these! Well guess what? You don’t even have to use the horseradish and people will still gulp these down lickety split!
If you know me at all, I specialize in quick and easy meals that are delicious so we can fill our bellies and still get the things done that we need to do! This yumminess is certainly a comfort food that will take you less than 15 minutes to put together! Let me show you how I make these!
Here’s what you’ll need….
Take a roast beef slice and place your sharp cheddar cheese on top of it!
Use store bought refrigerated mashed potatoes (or make them) and plop some on top of the cheese.
Gently roll those babies up and snuggle them on a greased baking sheet seam side down. (I used parchment paper so clean up is easy!)
Bake them at 450 degrees for 6 minutes! The high temp and quick baking time will make the cheese all gooey and melty- just how I like it!
After making these, I looked a little closer at the recipe and it said to place the roll ups in a 9 x 9 greased pan, cover with foil and then bake. You can choose which way is best for you! Hubby and I used a little bottled horseradish on top to add a little more flavor (AND TO CLEAR OUT THE SINUSES!) The kids ate them plain- it was a crowd pleaser!!

- 8 slices, deli roast beef, sliced ⅛ inch
- 8 slices sharp cheddar cheese
- 2½ cups mashed potatoes
- Horseradish Sauce
- Preheat oven to 450 degrees.
- Grease your 9 x 9 pan
- Top beef slice with cheese and potatoes.
- Roll up beef slice.
- Place in the pan seam side down.
- Cover with foil.
- Bake for 6 minutes.
- Serve with horseradish sauce if desired.
