I was up early this morning, so I decided to make a treat for my kids and serve them scrambled eggs and toast. Luckily, I had my camera in the kitchen and snapped a few pictures while I was making it. Sorry if the lighting is bad…it was dark outside!
These aren’t just regular scrambled eggs, these are SUPER SCRAMBLED EGGS!! I call them that because they have a secret ingredient…..cream cheese!! Not a lot, but enough to make it scrumptious!! Here’s the process…. Start with 8 eggs, scramble them in a bowl and add 1/4 cup of milk.
Now, here’s the secret weapon….
Does it have to be whipped cream cheese??? Nope. You can use regular or “light,” I just wouldn’t use fat free or any of the fruit flavored cream cheeses. Just take a few globs of the cream cheese and throw them into the egg mixture…
Put a pad of butter in your skillet, let it melt (or use cooking spray) and then add the mixture to the pan. Cook and don’t stir until the egg starts to set on the bottom of the pan. Use a heat resistant rubber spatula to move the egg across the pan to form large curds. Keep stirring until egg is done. Add salt and pepper to taste….
Here’s the final result…..a yummy and filling breakfast!!

Super Scrambled Eggs
8 eggs
1/4 cup milk
pad of butter or cooking spray
3 oz package of cream cheese, cubed…or a few globs from the tub
salt and pepper to taste
It does taste good. I have done something like this. Have not tried the whipped before. New reader to your blog. Your dogs are adorable. 🙂
