One of my favorite You Tubers, Ms Goldgirl, shared a recipe last week that I couldn’t resist. She claimed that it was simple, quick and easy- you can’t go wrong with that!! I gave it a try, and it was delicious! The hardest part was chopping all of the vegetables. I also made sure to double the recipe for my hungry family!! Here’s the recipe for you! (Printable recipe below)
(These ingredients are doubled and modified to what I had in my pantry.)
Chop the carrots, potatoes and onion. Cut meat into bite sized pieces and add to the vegetable mixture.
Add vegetable/meat mixture to your roaster or oven safe pan. Mix cream of mushroom soup and water, pour over all.
Cook for 3 hours at 300 degrees. My crock pot doubles as a roaster (mini oven) so I used that instead of turning on my oven for 3 hours.
Here’s a little sampling of the final product! Oh yes, Sweet Pea drenched this in ketchup, because we all know that everything tastes better with ketchup!

- 1 pound stew meat
- 1 cup of chopped carrots
- 4 medium potatoes, diced
- 1 large onion, diced
- 1 can cream of mushroom soup
- ¾ cup of water
- Chop all vegetables
- Combine vegetables with meat in an oven safe dish or in a roaster
- Mix cream of mushroom soup and water in a bowl
- Pour soup mixture over the veggies
- Cook for 3 hours at 300 degrees
Sounds delicious! And it looks good, too….with or without ketchup! =)
