Crispy Cheddar Chicken

A delicious, creamy chicken dish that is perfect for cold weather!!
  • 4 chicken breasts
  • 2 sleeves, Ritz crackers, crushed to make crumbs
  • ¼ t. salt
  • ⅛ t. pepper
  • ½ cup milk
  • 3 cups, cheddar cheese, grated or shredded fine
  • 1 t. parsley (optional)
  • Sauce: ** You might want to double the recipe for more sauce!**
  • 1 cream of chicken soup
  • 2 T. sour cream
  • 2 T butter
  1. Cut each chicken breast into 3 chunks.
  2. Dip chicken in milk, cheese and cracker crumbs and lay on a sprayed cookie sheet (I use parchment paper)
  3. Cover with foil and bake at 350 degrees for 35 minutes
  4. Remove foil and bake for 10 more minutes
  5. When chicken is close to being done, add sauce ingredients to a saucepan and heat until warm and stir until contents are smooth and creamy. (You can microwave the ingredients instead, too!)
