As a busy Mom, I’m always looking for a good, quick recipe to serve to my family, and pork tenderloin is the perfect fit for us!!
Start with 2 pork tenderloins in a greased 9×13 pan. (Yes, I’m aware that they look somewhat obscene!! haha)
Preheat your oven to 400 degrees…
Bake pork uncovered for 45 minutes at 400 degrees. Pork should register 160 degrees on a meat thermometer when it’s done…
Let meat sit for 3 minutes and then cut into 1 inch slices.
For a vegetable, I decided to make some steamed cauliflower….steam veggies (covered) for around 15 or 20 minutes, depending how firm you like your cauliflower.
and to make this meal extremely kid friendly, I made a family sized macaroni and cheese!
I served the pork with ketchup and/or honey mustard. We even had extra pork leftover, so I will shred it and have pork sandwiches tomorrow!!
I’m loving the cook once, eat twice plan!!
