I’ve always heard that breakfast is the most important meal of the day. People who eat a good breakfast are:
- leaner
- healthier
- have increased concentration
- feel more energized
- have better cholesterol levels
- able to remember and retain information
- consuming more nutrients during the day
There’s no doubt in my mind that eating breakfast is a good thing, but some days, I don’t feel like getting up before my kids to have a good breakfast prepared for them. Honestly, cereal for breakfast is a reality here almost every day- but, I have found something that makes my life easier as a Mom and helps me to start my kids day with a warm, hearty breakfast without a ton of effort. (These can be made whenever you have an extra 30 minutes of time!)
Here’s my secret weapon for starting our kids day off right …..Breakfast burritos!!
Here’s what you’ll need…. (full recipe below)
Start by browning your ground sausage…
Drain grease from sausage and set sausage aside. Using the same pan, scramble the eggs…
Add the sausage back in….then add the cheese and salsa….mix gently.
Warm your tortillas in the microwave, so they are pliable…. Now, take a 1/2 cup measuring cup, dip it into the filling and plop it on the center of the tortilla…
Now comes the tricky part….but, I know you can DO THIS!! Fold one side up and over your filling…
then the other side…
turn your tortilla and fold an end up and over the filling…
and then the other end…(If your tortilla starts to break open while folding, you”ll know that you didn’t warm it enough.)
Place your finished burritos on a cookie sheet to let cool… just look at all of these beauties!!!
After they are cooled, I wrap them in cling wrap (I used Press and Seal) and put them into a large well labeled freezer bag. Many times I will write the instructions for warming on the bag too…
Okay, I’m going to confess that I wasn’t sure how to spell “burritos.” I thought it was like the infamous potato/potatoes….add the “e” in there to make it plural. Guess what…I was wrong, and now the label on my bag is spelled wrong. Oh well, I learned something in the process, right? and I’ve educated you….you’re welcome….
Place these babies in your freezer and hope they don’t disappear in less than a week….My kids will eat them for breakfast or as an after school snack, etc. What can I say? My kids are piggies…
To reheat….place burrito in the microwave (with or without the plastic wrap) for 1 minute and 45 seconds…Enjoy!!

Breakfast Burritos
- 1 dozen eggs
- 1 pound ground sausage
- 2 cups, shredded cheese
- 1/2 cup chunky salsa (I use more)
- 15 flour tortillas ( You can see the brand and size I use in the ingredients picture)
- Gallon sized freezer bags
Brown sausage, drain and remove from pan. In the same pan, scramble and cook the eggs. To the eggs, add the sausage back in and also add the cheese and salsa…stir gently. Heat tortillas. Spoon 1/2 cup of filling into the tortilla and fold into a burrito. Allow burritos to cool, then wrap in plastic wrap and freeze in a large, gallon sized plastic bag. To reheat, microwave on high for 1 minute and 45 seconds (with or without the wrap.)

Hi Jill! I made these when my family came to visit this summer, after you first gave me this idea:-). I used smaller tortillas and added fried onions because my 15 year old nephew loves onions, and put a T. of taco sauce (medium) on each before wrapping up. I froze them individually with parchment and placed in large ziplock bags. We went through 35 burritos in just a few days. Great make ahead idea…great snack and breakfast! Keep the ideas a comin’!
