I asked Sweet Pea last Sunday what dinner dish she wanted me to make this week….and she said BLT Pasta! Honestly, I had forgotten about BLT Pasta because it is Winter in Wisconsin and I think of making this dish in the Summer! It’s been so warm here this week, turns out that this was the perfect dish to make tonight for dinner….Way to go, Sweet Pea- good choice!!
Here are the ingredients:
Boil your bow tie pasta noodles and put them into a large bowl (let noodles cool.) Add your diced tomatoes, bacon and lettuce to the pasta.
Holy cow, look at that yummy goodness…..I sure can’t wait until I can use REAL tomatoes from my garden for this recipe!! I guess the “Styrofoam” tomatoes from the store will do for now…
Add enough mayo to moisten, stir and then add salt and pepper as needed. I would recommend putting it in the refrigerator for an hour before serving, but it’s certainly not necessary! Enjoy!!
1 (12 oz.) box of bow tie pasta
3 medium sized tomatoes, diced
Shredded lettuce (I used about 3 to 4 cups)
6 slices of bacon, cooked and broken into pieces)
mayonnaise (I used light mayo, about 1 cup)
